Slow Cooker Honey Garlic Chicken Recipe
Description
This recipe starts with placing skinless bone-in chicken thighs in a slow cooker and pouring over a sauce made from honey, tomato paste, coco aminos (or soy sauce), salt, molasses, oregano, and minced garlic. The slow cooker cooks the chicken on high for 2 to 3 hours or low for 5 to 6 hours, gently braising the meat until tender and infused with the honey garlic flavors.
Before serving, tapioca starch whisked with cold water is added to thicken the sauce into a glossy glaze that clings to the chicken. The dish can be served as whole thighs with sauce ladled on top, or shredded and mixed back into the sauce for a pulled chicken style.
The slow cooking method tenderizes the meat thoroughly while concentrating the sauce flavors, balancing sweet honey notes with the savory garlic and umami elements from the tomato paste and coco aminos.
For large slow cookers, mixing sauce ingredients directly in the cooker before adding chicken is possible but may be difficult in smaller slow cookers.Cooking for longer times (up to 8 hours on low) is possible but results in chicken that is best shredded due to increased tenderness.
Ingredients
- 8 chicken thigh bone-in, skinless
- ¼ cup honey
- ¼ cup coco aminos can sub soy sauce
- 2 tablespoons tomato paste
- 1 teaspoon salt omit if you use soy sauce
- 1 teaspoon molasses
- ½ teaspoon oregano
- 4 cloves garlic minced
- 2 tablespoons tapioca starch or cornstarch
- sesame seed to garnish
- chive to garnish
Instructions
- Place the chicken thighs in your slow cooker in a single layer.
- In a small bowl, mix the honey, tomato paste, coco aminos, salt, molasses, oregano, and garlic. (See notes.) Pour the sauce over the chicken. Put the lid on the slow cooker and turn it to high for 2-3 hours or low for 5-6 hours. (See notes)
- A half hour before you're ready to eat, whisk the tapioca starch with 2 tablespoons of cold water and pour it into the crockpot. Mix it around a little to thicken the sauce.
- Either serve the chicken with some sauce poured over the top or shred the chicken and mix in ½ cup of the sauce.
Notes
- In larger slow cookers, you can mix the sauce inside the cooker before adding the chicken for easier preparation.
- Cooking the chicken longer (up to 8 hours on low) will make it very tender and better suited for shredding.
