Slow Cooker Italian Beef
Description
This recipe starts by whisking together liquid and seasoning ingredients including beef broth, water, salt, pepper, oregano, basil, onion powder, parsley, garlic powder, and bay leaves. The mixture is poured over a whole 5-pound chuck roast placed in a slow cooker. Cooking on low for 9-10 hours or high for 5-6 hours gradually breaks down the connective tissue in the beef, producing tender, pull-apart meat saturated with the herb-infused broth. Removing the bay leaves before shredding avoids unwanted texture or taste. Serving the shredded beef hot on crusty rolls with cheese adds a fulfilling sandwich option. Keeping the beef in the cooking juices preserves moisture until served.
Ingredients
- 1 ½ cups beef broth low-sodium
- 1 cup water
- 2 teaspoons salt
- 2 teaspoons black pepper ground
- 2 teaspoons oregano dried
- 2 teaspoons basil dried
- 2 teaspoons onion powder
- 2 teaspoons parsley dried
- 2 teaspoons garlic powder
- 2 bay leaf
- 5 pounds chuck roast
Instructions
- In a liquid measuring cup or bowl, combine water and beef broth with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, and bay leaves. Whisk to combine.
- Place roast in slow cooker and pour seasoning mixture over the meat. Cover, and cook on low for 9-10 hours or on high for 5-6 hours.
- When done, remove bay leaf, and shred meat with a fork (keep the shredded meat in the slow cooker with the juices). Serve on crusty rolls with cheese, if desired.
