Ingredients
- 2 pounds chuck roast sometimes labeled "pot roast", tender
- 16 ounces pepperoncinis , stems removed
- 1/2 cup beef stock low-sodium
- 1 tablespoon garlic minced, fresh
- 1 tablespoon Italian seasoning homemade
- 1/2 teaspoon kosher salt coarse
- 1/2 teaspoon black pepper ground
- 6 sub rolls large
- 12 lices swiss cheese
- giardiniera , for topping, optional
Instructions
- Add the beef roast to the slow cooker. Top with with pepperoncinis (with juice), beef stock, garlic, Italian seasoning, salt and pepper. Cover and set for 4 hours on high or 8 hours on low.
- Before serving, shred the beef with two forks and return to the slow cooker to soak up the juices.
- Toast the sub rolls and then add two slices Swiss cheese to each. Top with the shredded beef, pepperoncini and giardiniera.
