Slow Cooker Korean Beef
Description
This recipe begins by browning cubed chuck roast in oil to develop color and flavor before slow cooking. The beef is then combined with brown sugar, lite soy sauce, sesame oil, fresh minced garlic, ginger, and crushed red pepper flakes in the slow cooker. Slow cooking on low for 6-7 hours or high for 3-4 hours breaks down the meat fibers for tenderness and infuses the sauce deeply.
A slurry made from cornstarch and water is added near the end of cooking to thicken the sauce, producing a glossy finish that clings to the meat. The dish is completed by optional garnishes of diced green onions and sesame seeds that add freshness and a subtle nutty contrast.
This Korean beef is well suited to serve over steamed rice or noodles, accompanied by steamed vegetables or kimchi for a balanced meal. The sweet-savory flavor profile with mild heat is characteristic of Korean-style braised beef dishes.
