Description

Ingredients
- 1 pound lentils green or brown, dried
- 6 (about 24 ounces) chicken thigh all fat trimmed (or use chicken breast, boneless, skinless
- 2 (32 ounces each) chicken broth in cartons
- 1 oz diced tomatoes Rotel brand, canned
- 1 1/2 cups carrot diced
- 1/4 cup sofrito (my recipe)
- 1 teaspoon Turmeric
- 1 teaspoon cumin
- 1/2 teaspoon adobo seasoning
- 1/2 teaspoon kosher salt to taste
- 1/2 teaspoon black pepper to taste
Instructions
- Dump all the ingredients in a 6-quart slow cooker and cook on high 4 hours or low 8 hours.
- Shred the chicken with 2 forks.
- Adjust salt and seasoning to taste, as needed.
