  • 6 (about 24 ounces) chicken thigh all fat trimmed (or use chicken breast, boneless, skinless
  • 2 (32 ounces each) chicken broth in cartons
  • 1 oz diced tomatoes Rotel brand, canned
  • 1 1/2 cups carrot diced
  • 1/4 cup sofrito (my recipe)
  • 1 teaspoon Turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon adobo seasoning
  • 1/2 teaspoon kosher salt to taste
  • 1/2 teaspoon black pepper to taste

Instructions

  1. Dump all the ingredients in a 6-quart slow cooker and cook on high 4 hours or low 8 hours.
  2. Shred the chicken with 2 forks.
  3. Adjust salt and seasoning to taste, as needed.
