Slow Cooker Loaded Mashed Potatoes
Description
Slow Cooker Loaded Mashed Potatoes bring together red potatoes cooked gently and thoroughly in chicken broth and butter until tender enough to mash smoothly. After slow cooking, the potatoes are mashed with milk then enriched with shredded cheddar cheese, sour cream, and diced bacon. This combination creates a creamy, slightly tangy flavor balanced with the salty, smoky notes from the bacon. The texture is creamy with bits of bacon adding occasional crispness.
Because the potatoes are cooked in the slow cooker over hours, the dish can be prepared partially ahead and kept warm for serving, which is perfect for gatherings or meal prep. This side goes well with roasted meats, grilled dishes, or as part of holiday meals where a rich, luxurious mashed potato variation is welcomed.
The recipe offers options for using Yukon gold potatoes, adjusting seasoning with garlic powder or green onions, and substituting cream cheese for cheddar to vary the final creaminess. Cooking the bacon in advance saves time, and shredding cheese fresh ensures better melting and texture.
Ingredients
- 2.5 pounds potato cut into one inch pieces, red
- 1 cup chicken broth low sodium
- 4 tablespoons butter
- salt
- black pepper
- ½ cup milk
- 1 cup cheddar cheese shredded
- ¼ cup sour cream
- 4 Bacon cooked and diced into small pieces, strips
Instructions
- Grease the bottom of the slow cooker with cooking spray or a little oil.
- Add the potatoes, chicken broth, butter, salt, and pepper.
- Place the lid on and cook on high for 4 hours or low for 6 hours until the potatoes are very tender.
- Remove the lid and mash the potatoes until creamy with a potato masher or electric hand mixer on low speed.
- Then stir in the milk and stir to combine.
- Add the cheese, sour cream and bacon and stir to mix thoroughly.
- If not serving immediately, set the slow cooker to "warm" until ready to serve.
- Top with more shredded cheese and scallions if preferred.
Notes
- Yukon gold potatoes can be used instead of red potatoes for a creamier texture.
- Peeling potatoes is optional based on preference.
- Add ½ teaspoon garlic powder or sliced green onions for additional flavor.
- Use pre-cooked bacon to save preparation time.
- You can substitute 4 ounces of cream cheese for ½ cup cheddar for a different creamy texture.
- Shredding cheese from a block is preferred, but pre-shredded cheese also works.
