Description
The recipe uses boneless, skinless chicken breasts cooked in a slow cooker with dried oregano, black pepper, a bay leaf, Nando's peri-peri sauce, chicken broth, and full-fat cream cheese. Cooking on low for four hours ensures the chicken is fully cooked and tender enough to shred. The cream cheese melts into the sauce, smoothing out the peri-peri sauce and creating a creamy texture. After shredding the chicken, the sauce is stirred to combine evenly.
Instead of mixing the pasta directly into the sauce, the cooked pasta is served separately in individual bowls with the chicken and sauce spooned on top. This method helps the pasta avoid becoming overly saturated and maintains its texture. Garnishing with grated Parmesan cheese adds a savory finish. Ingredients
- 2 lbs. chicken breast boneless, skinless
- 1/4 tsp. oregano dried
- black pepper
- 1 bay leaf
- 1 peri-peri sauce 9.2 ounce bottle, Nando's brand
- 1.5 cups chicken broth
- 8 oz. full-fat cream cheese
- Parmesan Cheese grated, for garnish
- 12 oz. pasta do not add to slow cooker, cooked
Instructions
- Place chicken breasts in the slow cooker and season them with black pepper and dried oregano. Drop a bay leaf in there and add the bottle of Nando's sauce, chicken broth, and cream cheese. Cook on low for 4 hours or until the chicken is fully cooked and 165 degrees. Shred the chicken into chunks and stir the sauce, breaking up the cream cheese until the sauce is smooth. Taste for any needed salt or pepper.
- I do not like adding my pasta to the sauce, I put pasta in individual bowls and pour the chicken and sauce over the pasta (see notes). Garnish with some parmesan cheese, and red pepper flakes if desired. Enjoy!
