Description
This oatmeal recipe combines steel cut oats with soy milk, water, vanilla extract, apple pie spice, and salt in a slow cooker. Cooking on low for 9 to 11 hours allows the oats to absorb liquids and spices fully. The resulting oatmeal is creamy but with a slight chew typical of steel cut oats. The spices impart subtle warmth and sweetness without added sugar.

Ingredients
- 3 cups steel cut oats aka Irish Oats, dry
- 6 cups soy milk Original, Unsweetened, or Vanilla, Silk brand
- 8 cups water
- 1 tablespoon vanilla extract
- 2 teaspoons apple pie spice or pumpkin pie spice
- 2 teaspoons salt sea salt
Instructions
- Spray the crock of a large 6-quart slow cooker with nonstick cooking spray. Pour all ingredients in the slow cooker and stir.
- Cover the slow cooker and turn on low for 9-11 hours. Stir again and serve the oatmeal warm topped with your favorite oatmeal add-ins: berries, bananas, toasted nuts, coconut, dried fruit, honey, brown sugar, etc.
