Description
In this Slow Cooker Pepper Steak recipe, strips of round steak or London broil are coated with flour and seasoned with salt and pepper before being combined with sliced yellow onion, green and red bell peppers, chopped Roma tomatoes, minced garlic, grated ginger, and a bay leaf. The addition of water, soy sauce, red wine vinegar, Worcestershire sauce, and white pepper creates a flavorful cooking liquid that tenderizes the meat over long, slow cooking.
The slow cooker method allows the beef to become tender and absorb the mingled flavors, with vegetables softening to a stew-like consistency. The balance of savory, tangy, and mildly spicy notes comes through from the soy sauce and vinegar, complemented by the fresh aromatics.

Ingredients
- 2 lbs round steak cut into strips, or London broil
- 2 tbsp all-purpose flour
- 1 yellow onion sliced
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 2-3 Roma tomato chopped
- 5 garlic minced, cloves
- 1 1/2 tsp ginger freshly grated
- 1 bay leaf
- 1/2 cup water
- 2 1/2 tbsp soy sauce
- 2 1/2 tbsp red wine vinegar
- Worcestershire sauce couple dashes
- 1/8 tsp. white pepper
- salt to taste
- black pepper to taste
Instructions
- Add sliced meat to slow cooker. Season meat with salt & black pepper, then sprinkle flour on the meat and stir to coat evenly. Add the onion, bell peppers, tomatoes, garlic, ginger, bay leaf, water, soy sauce, red wine vinegar, Worcestershire sauce, and white pepper.
- Cook on high for 3 hours or until meat is tender, or on low for 6 hours. Taste for needed salt or pepper and serve over rice or mashed potatoes. Enjoy!
