Slow Cooker Pork Roast with Potatoes and Carrots
Description
The recipe uses browning of the pork roast first in a neutral oil to develop flavor and texture before placing it in the slow cooker. The vegetable medley consists of quartered potatoes, baby carrots, and onion chunks, which are mixed with a creamy blend of mushroom soup and dry onion soup mix. This mixture is poured over the pork for slow cooking.
Cooking on either high for about four hours or low for eight hours allows the pork to become very tender and the vegetables to soften while absorbing the savory mushroom-onion sauce. The slow cooker method yields a deeply flavored roast that falls apart easily, with potatoes and carrots enriched by the creamy sauce base.
This dish can be served as a satisfying entrée for dinner. It also works well for leftovers, which can be stored in an airtight container in the fridge for several days. Leftover meat can be repurposed into pork sandwiches or reheated gently in the microwave or oven, making the meal convenient for multiple uses.
