Slow Cooker Potato Bacon Corn Chowder

This Slow Cooker Potato Bacon Corn Chowder blends diced red potatoes, bacon, corn, and bell pepper in a creamy base made with heavy cream and chicken broth. Slow cooking develops tenderness and depth without constant stirring, while Italian seasoning adds aromatic notes. The chowder balances texture between soft potatoes and the slight crunch of red pepper and bacon, creating a comforting soup to enjoy on cool days or as a hearty lunch.

Description

Slow Cooker Potato Bacon Corn Chowder combines staple ingredients including red potatoes, corn, bacon, onion, and red pepper in a slow cooker for a hands-off creamy soup. The recipe uses Italian seasoning and a flour-thickened base with heavy cream and chicken broth to form a rich texture. Cooking the mixture slowly on low or high allows the potatoes to soften fully and flavors to meld. The bacon adds a smoky salty contrast, while the corn and peppers provide sweet and crisp bursts.

The chowder is seasoned with salt and black pepper to enhance the flavor profile, and fresh parsley can be added as garnish for brightness. This chowder works well as a warming lunch or dinner dish with rustic appeal.

A lighter option can be achieved by substituting fat-free half and half for the heavy cream, yielding a less rich but still enjoyable chowder.

Ingredients

Servings
  • 1 medium yellow onion diced
  • 1 red pepper chopped
  • 3 ounce cans corn drained, yellow
  • 3 cups heavy cream (see note)
  • 2 cups chicken broth low sodium
  • 1 pound red potatoes chopped into 1 inch pieces, baby
  • 2 teaspoons Italian seasoning
  • ¼ cup flour
  • salt to taste, (I used about 1 teaspoon each
  • black pepper to taste, (I used about 1 teaspoon each
  • 4-6 lices Bacon cooked and diced

Instructions

  1. Add onions, red pepper, corn, milk, chicken broth, potatoes, flour, and Italian seasoning to slow cooker and stir. Cover and cook on high 4 hours or low 6-8 hours. Potatoes should be easily pierced with a fork.
  2. Stir in salt and pepper to taste and bacon. Garnish with fresh parsley if desired and serve.

Notes

  • Substituting fat-free half and half for heavy cream creates a lighter chowder, but expect a less creamy texture.
  • Cook the chowder until potatoes are easily pierced to ensure tenderness.
  • Garnish with fresh parsley for added color and mild herb flavor.
