  • 1 pound pork tenderloin
  • 2 tablespoons coffee click link for the recipe, rub seasoning
  • cup chicken broth
  • cup balsamic vinegar
  • 1 tablespoon honey
  • 2 garlic crushed, cloves
  • 4 sweet potato medium-size

Instructions

  1. Rub the pork tenderloin all over with the coffee rub.
  2. Place the pork in a slow cooker.
  3. In a medium bowl, whisk the chicken broth, balsamic vinegar, honey and garlic together.
  4. Pour the mixture over the pork.
  5. Cook on low for 6-8 hours or on high for 4 hours.
  6. About an hour before serving the pork, place the sweet potatoes in the oven set to 350°F for 45 minutes, or until soft to the touch.
  7. Remove from the oven and cool 10-15 minutes.
  8. While the potatoes are cooling, use two forks or meat claws to pull the pork apart in the crock pot.
  9. Slice open the potatoes and fill them with the pulled pork.

Notes

  • The pulled pork can be served either inside roasted sweet potatoes or as a sandwich on toasted hamburger buns.
