  • 2 cans pumpkin 15 oz cans, puree
  • 1/2 sweet onion finely diced
  • 2 tsp garlic minced
  • 1 tsp ground ginger
  • 1 tsp Turmeric
  • 1 tsp ground cinnamon
  • 2 bay leaf
  • 1/4 tsp salt
  • 2 1/2 cups vegetable broth
  • 1 coconut milk 15 oz can, can

Instructions

  1. Add all the ingredients except for the coconut milk to a slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. Then remove the bay leaves and use an immersion blender to carefully purée the soup until it’s smooth.
  4. Then stir in the coconut milk.  Cover and cook on low for 10-15 minutes until the coconut milk is combined and heated through.
  5. Serve warm and enjoy!

Notes

  • If you don't have an immersion blender, transfer soup carefully in batches to a standard blender for pureeing.
  • Store leftover soup in an airtight container in the refrigerator for up to 5 days.
