Ingredients
- 1 pound dried red beans
- 2 pound andouille sausage sliced
- 1 green bell pepper (diced)
- 3 stalks celery (diced)
- 7 cups chicken broth
- 1 onion (diced)
- 1 tablespoon creole seasoning
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

Instructions
- Rinse and drain the beans.
- Add the beans and all the remaining ingredients to a crock pot. Stir to combine the ingredients.
- Cover and cook on high for 6-8 hours until the beans are tender and soft.
- Serve with a spoonful of rice in each bowl and enjoy!

- Refrigerate the leftovers in an airtight container for up to 5 days.
