Slow Cooker Rosemary Garlic Chicken
Description
This recipe uses carefully balanced seasonings with rosemary, garlic, and dried mustard applied directly to chicken breasts set in olive oil and chicken broth before slow cooking. The slow cooker cooks the chicken over several hours at a low or high setting, allowing the meat to absorb the flavors while becoming tender without drying out. The broth acts as both a cooking medium and flavor enhancer, keeping the chicken juicy.
The resulting chicken is subtly herbaceous with mild garlic pungency, suited for serving alongside vegetables, grains, or in salads. The slow cooker method provides convenience by requiring minimal active attention during cooking.
The dish is versatile and can be served as the main protein in various meals, with the broth reserved as a light sauce or base for other dishes.
Ingredients
- 2 tablespoon olive oil or butter
- 3 chicken breast boneless skinless
- 1 teaspoon rosemary dried
- 2 cloves garlic minced
- 1 teaspoon dried mustard
- ½ teaspoon black pepper
- 2 cups chicken broth
Instructions
- Place oil in the bottom of slow cooker.
- Put the chicken in next.
- Sprinkle the rosemary, garlic, mustard and pepper evenly on top of each chicken breast.
- Pour the chicken broth along the sides of the chicken. I tried to keep as much of the seasoning on top of the chicken.
- Cook on high for for 4-5 hours or on low for 6-8 hours.
