Slow Cooker Spinach Artichoke Chicken Soup
Description
Start by layering chicken breasts in the slow cooker and seasoning them with dried basil, parsley, salt, and pepper. Adding diced yellow onion, minced garlic, artichoke hearts, and chicken broth creates a flavorful base. Cubed cream cheese is placed on top to melt and enrich the soup during the low or high heat slow cooking phase. After cooking, the chicken is removed, shredded, and returned to the pot along with fresh baby spinach and grated Parmesan cheese. The soup continues cooking briefly to allow the cheese to melt and the spinach to wilt.
The result is a creamy, cheesy soup with tender chicken chunks softened by the artichokes and fresh spinach. The slow cooker method allows the flavors to blend gently without requiring constant attention. The combination of cream cheese and Parmesan adds richness and depth without needing heavy cream.
This soup can serve as a comforting meal on cooler days, offering protein, greens, and a touch of indulgence in a warm broth. Garnish with extra Parmesan for more flavor as desired.
