Description

The recipe places a bone-in or boneless spiral-sliced ham in a slow cooker and covers it with brown sugar before pouring on maple syrup and apple cider. It is cooked on low for 2 to 3 hours, allowing the sugars and liquids to penetrate and glaze the ham surface while keeping the meat moist. Towards the end, more cooking juice is spooned over the ham to enhance flavor before a final short cook.   • 7 lb ham bone-in (or boneless), smoked, uncured, fully cooked, spiral-cut
  • cups brown sugar preferably dark
  • 1 cup maple syrup pure
  • 1 cup apple cider or 100% apple juice

FOR THE SAUCE

  • ¼ cup Dijon mustard
  • ¼ cup mustard aka: Old Style, stone-ground
  • 1 tablespoon apple cider vinegar
  • salt to taste

Instructions

  1. Place the ham in your slow-cooker, flat-side down.
  2. Sprinkle the brown sugar all over the ham and use your clean hands to work the sugar into the ham. Pour the maple syrup and apple cider over the top of the ham.
  3. Place the lid on the slow-cooker and turn on LOW and cook for 2 to 3 hours. (no less than 2, no more than 3).
  4. Take the lid off and use a large spoon to pour the cooking liquid all over the top of the ham. Put the lid back on and slow-cook for another 30 minutes.
  5. Use a couple of large spoons or spatulas to carefully remove the ham from the slow cooker and place it on a cutting board or serving platter. Cover with foil if not serving within 15 minutes.
  6. To make the sauce, use a measuring cup to remove 2 cups of the cooking liquid from the slow-cooker. In another medium-sized bowl, mix together the two mustards and the apple cider vinegar. Stir in the reserved liquid. Whisk until fully combined. Taste, it may need a little more salt, if so, sprinkle some in. Transfer to a gravy boat and serve with sliced ham.

Notes

  • Bone-in or boneless ham works; bone-in preferred for flavor.
  • Do not cook longer than 3 hours on low to avoid overcooking.
  • After cooking, keep warm by switching the slow cooker to WARM mode.
  • For easier serving, slice ham away from the bone and arrange on a platter.
  • You may add carrots or parsnips to cook with the ham, increasing the time to 3 to 3½ hours; monitor carefully to prevent overcooking.
