  • 1 tablespoon olive oil
  • 1 lb ground turkey 99% lean
  • 1 onion diced, medium
  • 1 red pepper seeded, stemmed, and chopped
  • 1 yellow bell pepper chopped
  • 30 ounces tomato sauce
  • 30 ounces diced tomatoes petite
  • 30 ounces black beans rinsed and drained, canned
  • 30 ounces red kidney beans rinsed and drained, canned
  • 16 ounce jalapeño peppers drained, deli-sliced, tamed, jarred
  • 1 cup corn frozen
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • salt to taste
  • black pepper to taste
  • green onions shredded cheese, avocado, sour cream/Greek yogurt, optional toppings

Instructions

  1. Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until brown. Pour turkey into slow cooker.
  2. Add the onion, peppers, tomato sauce, diced tomatoes, beans, jalapeños, corn, chili powder, and cumin. Stir and season with salt and pepper.
  3. Cover and cook on High for 4 hours or low for 6 hours. Serve with toppings, if desired.

Notes
