  • 1 (20 ounce each) bag 15 bean soup HamBeens brand; Cajun
  • 1 green bell pepper diced
  • 1 large onion diced
  • 1 cup celery diced
  • 2 cloves garlic minced
  • 8 ounces smoked sausage sliced
  • 2 cups turkey or shredded, cooked, chopped
  • 4 cups chicken broth reduced sodium
  • 2 cups water
  • 1 (14.5 ounce each) can diced tomatoes
  • salt to taste
  • black pepper to taste
  • parsley for garnish, optional, chopped, fresh

Instructions

  1. Rinse beans and remove any debris.
  2. Place beans, onion, pepper, celery, garlic, chicken broth, water, and turkey a 6 quart slow cooker.
  3. Cook on high 5-7 hours or until beans are tender.
  4. Add seasoning packet, sausage and tomatoes.
  5. Cook for an additional 30 minutes.
  6. Serve with cornbread.

Notes

  • No pre-soaking of beans is needed, but soaking can shorten cooking time—reduce water by 1 cup and check readiness sooner if soaked.
