Slow Cooker Turkey Tortilla Soup

This slow cooker turkey tortilla soup is loaded with delicious Tex-Mex flavor and tender white meat turkey. Healthy and tasty!

Ingredients

Servings

Soup

  • 2 cups chicken broth
  • 1 can (15 oz) corn
  • ½ cup yellow onion chopped
  • 3 cloves garlic minced
  • 1 can (15 oz) fire-roasted tomatoes
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • 1 lb turkey or leftovers, shaved
  • ¼ cup lime fresh squeezed

To Garnish

  • cilantro
  • 2 lime fresh
  • tortilla chips
  • avocado slices
  • jalapeño fresh, sliced
  • scallions
  • cheddar cheese Monterey blend

Instructions

  1. Get out and measure your ingredients.
  2. In a 6-quart or large slow cooker, add chicken broth and corn.
  3. Next, add garlic and onion.
  4. Add fire roasted tomatoes.
  5. Add cumin, chili powder, garlic powder and cayenne powder.
  6. Stir until blended.
  7. Add turkey and lime juice, if using.
  8. Cook on slow for 6 hours or on high for 2-3 hours.
  9. Using a large spoon or ladle, spoon out soup into serving bowls.
  10. Top with tortilla chips, avocado slices, jalapeno, cilantro, lime or scllions.
  11. Serve with salad and corn muffins or corn bread. Enjoy every bite.
