Slow Cooker White Chicken Chili
Description
Slow Cooker White Chicken Chili features chicken breasts seasoned with cumin, chili powder, smoked paprika, and optional cayenne for layered warmth and depth. Combined with diced onion, garlic, minced jalapeño, black beans, undrained diced tomatoes and green chiles (Rotel brand), and chicken broth, the chili simmers gently in a slow cooker. The slow cooking tenderizes the chicken and blends the spices and vegetables evenly throughout.
After 5 to 6 hours on low, the chicken is shredded directly in the pot, then mixed thoroughly with full-fat cream cheese, which melts smoothly to create a creamy texture and rich mouthfeel in the chili. Topped with chopped fresh cilantro, this dish offers a satisfying blend of mild heat, creamy richness, and hearty beans, making it suitable as a warming entrée or a filling main for gatherings.
This chili can be served with typical toppings like shredded cheese, sour cream, or tortilla strips to customize the flavor and texture experience. The slow cooker method allows for hands-off preparation, making it practical for a busy day.
