  • 2 tbsp. chili powder
  • 1/2 tbsp. smoked paprika
  • 1/2 tsp. cayenne pepper optional
  • salt
  • black pepper
  • 1 yellow onion diced, medium
  • 2 garlic minced, cloves
  • 1 jalapeño minced
  • 15 oz. black beans drained, canned
  • 10 oz. diced tomato undrained, can, Rotel brand
  • 10 oz. diced green chile undrained, can, Rotel brand
  • 1 1/2 cups chicken broth
  • 8 oz. full-fat cream cheese
  • cilantro chopped, handful fresh

Instructions

  1. To a slow cooker, add the chicken breasts and season them with cumin, chili powder, smoked paprika, cayenne, salt & pepper. Then add the onion, garlic, jalapeno, black beans, Rotel, chicken broth, and cream cheese.
  2. Cook on low for 5-6 hours, or until the chicken is fully cooked.
  3. Shred the chicken in the slow cooker and stir the cream cheese around until it has incorporated into the chili. Top with fresh cilantro and your favorite toppings. Enjoy!
