Slow Cooker White Chicken Chili

This slow cooker white chicken chili recipe is creamy, easy, and healthy, and the perfect crockpot chicken recipe!

Ingredients

  • 2 onion diced
  • 3 ribs celery diced
  • 1 jalapeno pepper seeded and finely diced
  • 2 lbs. chicken boneless, skinless breasts and/or thighs
  • 12 oz. green chilies three 4-oz. cans, canned, mild, fire roasted, diced
  • 6 cups chicken stock or broth
  • 1 tablespoon kosher salt
  • 1 teaspoon cumin ground
  • 1 teaspoon oregano dried
  • 2 bay leaf
  • 28 oz. white kidney beans or cannellini, navy, or great northern beans, drained and rinsed, canned
  • 2 cups corn frozen
  • 8 oz. sour cream
  • lime juice juice of one lime
  • Monterey jack cheese for serving, optional: shredded cheese, lime wedges, more sour cream, and/or hot sauce

Instructions

  1. Place all ingredients except for beans, corn, sour cream, and lime juice into a large slow cooker.
  2. Cook on low for 5 1/2 hours.
  3. Remove the chicken and shred or dice to small pieces and stir back into the slow cooker.
  4. Stir in the beans and corn. Heat for 15 minutes more, covered.
  5. Just before serving, stir in sour cream and lime juice.
  6. Serve with optional fixings.

  • Money saving tip: use chicken thighs instead of breasts.
  • For a spicy version, leave the seeds in the jalapeño.
  • For a dairy free version, omit the sour cream or replace it with coconut milk.
  • For a grain free version, omit the corn.
  • For small slow cookers, divide the ingredients in half.
  • To make on the stove top, follow the same directions but instead of cooking for 5 1/2 hours, cook on low heat, covered, for about an hour or until the chicken is fully cooked.
