Slow Cooker Yankee Pot Roast
Description
This recipe starts by seasoning and browning a large beef roast in oil to develop a caramelized crust that enhances flavor. The roast is transferred to a slow cooker along with red wine or beef broth, beef broth, quartered onion, chunked carrots or baby carrots, mini red potatoes, minced garlic, dried thyme and rosemary, diced tomatoes, and Worcestershire sauce. The slow cooker cooks the mixture on low for 8-9 hours or high for 5 hours until the beef is tender enough to shred easily.
The cooking process results in a rich, savory broth that flavors the vegetables and meat uniformly. An optional cornstarch and water slurry can be added near the end of cooking to thicken the cooking liquid into a smooth gravy. The roast is served with the vegetables and gravy, garnished with fresh parsley to add brightness.
Ingredients
Beef:
- 1 (3.5 - to 5-pounds) top round roast or chuck roast or round tip roast
- kosher salt or sea salt
- black pepper freshly ground
- 3 tablespoons vegetable oil
Slow Cooker Ingredients:
- 1 cup red wine or beef broth
- 1 cup beef broth low sodium
- 1 onion quartered, large
- 2 carrot cut into chunks or 2 cups of baby carrots, large
- 10 mini red potatoes washed
- 1 tablespoon garlic minced
- 1 teaspoon thyme dried
- 1 teaspoon rosemary dried
- 1 . 5oz diced tomatoes canned
- 2 tablespoons Worcestershire sauce
Optional Cornstarch Slurry:
- 1 tablespoons cornstarch
- 2 tablespoons water
Garnish:
- parsley fresh chopped
Instructions
Brown the Beef:
- Season beef with salt and pepper.
- Place a large cast iron pan or Dutch oven on the stove over heat. Once hot, add oil, and sear roast on all sides.
Add to Slow Cooker:
- Place the roast in the slow cooker and add the remaining ingredients from the "Slow Cooker Ingredients" list. Stir well to combine.
- Cover and cook on Low for 8-9 hours or High for 5 hours. Until the beef is tender.
Optional Cornstarch Slurry:
- Mix water and cornstarch in a small bowl until the cornstarch is fully dissolved.
- During the last 30 minutes of cooking, add the slurry to the slow cooker to thicken the gravy. Gently stir to combine the ingredients.
- Cover and cook for 30 minutes on High. If needed, add more slurry.
Serve:
- Serve the roast with the veggies and topped with the gravy sauce. Garnish with fresh chopped parsley.
