These roasted red onions are marinated and charred to perfection, creating an irresistible sweet flavor and creamy texture.

Ingredients
- 5 red onion cut into 1 inch thick wedges, medium
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper ground
Marinade
- 1/2 cup water
- 1/2 cup red wine vinegar
- 1 tbsp brown sugar
- 1 tbsp soy sauce
Instructions
- Place a rack in lower third of oven and preheat to 400°F.
- Arrange sliced onions into 9x12" roasting pan that will hold all onion slices. Blend marinade ingredients in small bowl and pour over onion slices (See Note 1).
- Drizzle the onions with olive oil, season with salt and pepper. Roast for 30 minutes or until wedges are well charred and liquid has become syrupy.
Notes
- Cover with plastic wrap and refrigerate overnight for a deeper flavor, optional.
