Smash Burger Sliders

Report
Smash Burger Sliders use loose balls of ground beef seasoned with salt and pepper, cooked on a hot griddle with butter then smashed thin to form crispy, caramelized patties topped with cheddar cheese and served on toasted slider buns. This method renders a juicy, flavorful burger with a seared crust, ideal for small sandwich servings.

Description

The recipe begins by rolling ground beef into loosely packed balls seasoned simply with salt and pepper. These are chilled briefly, then placed on a hot griddle coated with melted butter. Each ball is pressed firmly onto the griddle to create a thin patty that quickly sears, developing crispy edges and browned surfaces while retaining juiciness inside.

After cooking for a couple of minutes until the meat’s surface juices rise, the patties are flipped, topped with cheddar slices to melt, and served on toasted slider buns warmed on the griddle. The assembly creates small, rich sliders balanced by the buttery bread.

The recipe notes suggest looser balls are easier to smash, and while leaner beef options are possible, 80/20 fat ratio offers the preferred flavor and texture. This makes these sliders a concise option for casual gatherings or quick meals.

Ingredients

Servings
  • 2 ½ pounds ground beef 80/20
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 Tablespoons butter salted
  • 12 lices cheddar cheese
  • 12 slider roll or Hawaiian Rolls

Instructions

  1. Roll the beef into approximately 1.5 ounce size balls.  Season them with salt and pepper. Place them in the refrigerator until you are ready to cook them.
  2. Preheat a griddle or cast iron pan over medium high heat (approximately 400 degrees F).
  3. Cut the slider rolls in half and place them on the griddle for 2 minutes to toast them and then set them aside while you prepare the beef.
  4. Place the remaining butter on the griddle or cast iron pan. Move it around to melt it. Then place the beef balls on the griddle in the melted butter. You may need to work in batches depending on the size of your pan. Then top each one with a piece on parchment paper and then firmly press down to smash the beef into a thin patty with either a burger press or a large spatula and then discard the parchment paper.
  5. Cook the patties for 2 minutes until the juices in the beef start to raise to the top and the color starts to change. Then scrape under the patty to get under the caramelized parts and flip the patty. Once flipped, do not smash down the patties again. Cook for 1 more minute and place a piece of cheese on the patties to melt. Once the cheese is melted, place half of the patties on top of the other patties.
  6. Then place the patties on the slider rolls (2 patties per roll).
  7. Top with your favorite burger toppings and enjoy!

Notes

  • Loosely form beef balls without packing tightly to facilitate smashing thinly.
  • Using 80/20 ground beef balances flavor and fat for ideal juicy patties; leaner blends work but may be drier.
