Description

This recipe stretches ground beef thinly onto flour tortillas, seasoning them before cooking each tortilla meat side down in a skillet, forming a crispy, flavorful crust directly on the tortilla itself.   • 1 lb ground beef (80/20)
  • 4 flour tortillas I use the Fajita style size
  • 1 tsp seasoning salt or Taco Seasoning
  • 4 lices American cheese

Toppings

  • 1 head iceberg lettuce
  • 1/2 yellow onion diced, medium
  • 1/2 cup dill pickles diced
  • sesame seeds toasted

321 Sauce

  • 3 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard

Instructions

  1. Divide the ground beef into 4 pieces. Press each portion on the top of each tortillas, spreading to edges. Season with either all-purpose seasoning or taco seasoning.
  2. Shred half of the iceberg lettuce, saving remaining for other use. Dice onion and pickles and place all in separate bowls.
  3. In a small bowl whisk together the 321 sauce. Set aside.
  4. In a skillet over medium-high heat place the tortilla meat side down for 4 minutes. Check for doneness, cook longer if desired. Flip with spatula, top with slice of cheese, cover with lid and turn off heat. Let sit 1 minute.
  5. Remove from pan and top with shredded lettuce, onion, pickles, sauce and sesame seeds. Fold up and eat taco-style.
