Smashed Cucumber Salad
Description
The recipe starts with removing the cucumber skin and ends, then smashing the cucumber to release water and create an uneven, tender texture. After salting and rest to drain excess liquid, the vegetables are mixed with shredded red bell pepper and fresh coriander sections. The dressing incorporates light soy sauce, vinegar, sesame oil, chili oil, sugar, and plenty of grated garlic for sharpness and heat. Combining these creates a salad with crisp cucumber texture, fresh herb notes, and layers of seasoning that is both light and flavorful.
This salad is served immediately after mixing to maintain the cucumber’s crunch and can complement a variety of meals as a cold, tangy side.
Ingredients
- 2 cucumber
- 1 Coriander cut into 1 inch sections and keep some for decoration, small bunch
- pinch salt
- 1 tsp. sugar
- ¼ red bell pepper ,shredded
- 1 tbsp. soy sauce light
- 1 tbsp. sesame oil
- 1 tbsp. Chili oil
- 1 tbsp. vinegar
- 3 garlic grated, cloves
Instructions
- Remove the tough skins and the two ends. Cut the cucumber in center lengthwise.
- Then smash the cucumber with a wide knife (recommend using a Chinese cutting knife). Optionally you can remove the pule. Then cut into 3-4cm length sections. Transfer to a large bowl.
- Sprinkle salt, mix well and set aside for 10 minutes. Discard the liquid in the bottom.
- Add coriander and bell pepper shred along with all of the seasonings. Mix well and serve directly.
