This smashed potato everything bagel is crispy, creamy, and topped with all the fresh classic lox bagel flavors. It's a healthier spin on a bagel breakfast idea!

Ingredients

  • 4 medium white potatoes
  • 1 tablespoon extra-virgin olive oil
  • 1 ½ tablespoons everything Bagel seasoning
  • 8 tablespoons cream cheese
  • 8 ounces smoked salmon
  • ¼ cup Thinly sliced red onion
  • 2 Persian cucumbers shaved or sliced
  • 2 teaspoons capers
  • Fresh dill for garnish

Instructions

  1. Boil the potatoes. Place the potatoes in a pot and fill it with enough water to cover the potatoes by an inch. Salt the water (I use about a tablespoon of kosher salt). Bring the pot to a boil over medium-high heat, then cook the potatoes until fork-tender, about 22 to 25 minutes.
  2. Drain and cool. Drain the potatoes in a colander and let them cool to the touch, about 10 minutes.
  3. Season and flavor. Preheat the oven to 450°F (230°C). Transfer the potatoes to a mixing bowl, then add the oil, and everything bagel seasoning. Stir to fully coat the potatoes in the seasoning.
  4. Smash the potatoes. Place the potatoes on a small baking sheet and use the bottom of a wide-bottomed glass to smash them down. Aim for a height of about ¾-inch. Bake until the potatoes are lightly golden on the top, about 25 minutes.
  5. Top the potatoes as bagels. Once the potatoes have cooled a bit, spread some cream cheese on top, top with smoked salmon, a few thin slices of red onion, some capers, and a few small sprigs of fresh dill.

Notes

  • For extra crispy smashed potatoes, here are a few tips to try. First, smash them down to an even thinner potato. Be forewarned that they’re more likely to break apart, but at least they’ll be super crispy! Second, let your smashed potatoes air dry for another 5 to 10 minutes after smashing them on the baking sheet. Third, brush the smashed potatoes with more olive oil or melted butter before baking them. 
  • You can make these in the air fryer by air frying the smashed potatoes at 400°F for 12 to 15 minutes or until fork tender.
