Smashed Potatoes with Sour Cream and Chives

  • 6-7 potato leave the skin on, halved, Yukon gold variety
  • 3 tbsp sour cream
  • 2 tbsp butter
  • 2 tbsp chive chopped, fresh
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked

Instructions

  1. Heat a large pot of salted water until boiling. Add the potatoes and cook for 15-20 minutes or until fork-tender and cooked through.
  2. Drain the potatoes (leaving the skin on); add the sour cream, butter, chives, sea salt, and freshly cracked pepper, to taste.
  3. Smash by hand with a potato masher or use a hand mixer until creamy.
  4. Serve immediately. Enjoy.
