Smashed Red Potatoes

Smashed Red Potatoes deliver a rustic, crispy side dish featuring small red potatoes boiled until tender, then gently smashed and roasted with olive oil and seasonings. The result combines crunchy edges with soft, tender insides. Garnished with minced parsley or rosemary, this dish offers a satisfying texture contrast and a savory flavor boost.

Description

This recipe transforms small red potatoes by boiling them until fork-tender, then slightly crushing each one to create irregular shapes that crisp up during roasting. Drizzled generously with olive oil and sprinkled with seasoning salt, garlic powder, and black pepper, they develop a golden brown crust while maintaining a chunky, rustic texture inside.

The final dish carries flavors of garlic and herbs, enhanced by the fresh parsley or rosemary garnish. The high oven temperature ensures a crunchy exterior with a tender, creamy interior, making these potatoes a versatile side suitable for many meals.

These potatoes should be served warm to retain their crispiness and are best made fresh. Using foil on the baking sheet helps with easy cleanup and promotes even roasting.

Ingredients

Servings
  • 1 1/2 lbs red potato golf ball size, small new
  • 3 tbsp olive oil
  • 1 tsp SEASONING or seasoning of your choice, all purpose
  • 1 tsp garlic powder
  • 1/2 tsp black pepper ground

Garnish

  • 2 tbsp parsley minced, or rosemary

Instructions

  1. Preheat oven to 450°F.
  2. Bring large saucepan of salted water to a boil. Add the potatoes and cook them until they are fork-tender, about 15-18 minutes.
  3. Drain potatoes when done and allow them to cool slightly until you can safely handle them.
  4. Generously drizzle olive oil on a sheet pan lined with foil, and set the potatoes in rows. Use a fork, potato masher, or bottom of a cup to gently press down on the potato until it slightly mashes. You want these rustic and chunky; the thinner you smash them, the crispier they'll become.
  5. Drizzle the tops with olive oil and sprinkle with seasoning salt and fresh ground black pepper.
  6. Place them on the top rack of the oven, and bake them for 30-35 minutes, or until crispy, crunchy, and golden brown.
  7. Sprinkle with minced parsley, rosemary or seasonings of choice and serve warm.
