Smoked Bone Marrow Compound Butter

This Smoked Bone Marrow Compound Butter blends rich roasted bone marrow with softened butter, parsley, and black pepper. The marrow is cooked by smoking or roasting marrow bones until soft and separating from the bone, then mixed with butter and seasonings. The result is a flavorful, silky butter that enhances meats, breads, or vegetables.

Description

The recipe requires roasting marrow bones over indirect heat at around 375-400°F until the marrow softens and begins pulling away from the bone, about 25-30 minutes. The marrow scoop is mixed with softened butter, black pepper, and chopped parsley to form a compound butter. This mixture can be shaped into a log or portioned into an ice cube tray, facilitating convenient use and storage.

The smoked marrow imparts a deep, earthy flavor to the butter, while the parsley adds freshness and black pepper a mild spice. This butter can be used as a topping for grilled meats, spread on crusty bread, or melted over vegetables to add richness and complexity.

Portioned butter can be frozen for later use. This recipe captures marrow’s unique flavor in a smooth butter form, making it easy to add marrow taste to various dishes without preparation hassle.
