Smoked Buffalo Chicken Dip

An easy to make spicy, cheesy chicken dip that's sure to be a crowd pleaser. Juicy chunks of rotisserie chicken with buffalo sauce and lots of cheesy flavors, cooked up in a smoker adding a lightly smoked flavor.

Ingredients

Servings

Dip

  • 8 ounce cream cheese softened
  • 3 ½ - 4 cups rotisserie chicken or chicken breast cooked, shredded or chopped
  • cup buffalo wing sauce
  • cup ranch or blue cheese salad dressing
  • cup sour cream
  • 1 ½ - 2 cups shredded cheese

Optional

  • 1 cup cheese shredded to sprinkle on top when almost finished smoking
  • onion powder to taste
  • garlic powder to taste
  • salt to taste
  • pepper to taste
  • extra hot sauce or crushed red chili flakes for spicier flavor

For serving

  • vegetable sticks or slices, corn or tortilla chips, pretzels, crackers or baguette slices for dipping
  • green onions thinly sliced, sprinkled over the top for garnish

Instructions

  1. Get out and measure your ingredients.
  2. Prepare a 13x9 inch pan with cooking spray and set aside.
  3. In a large bowl combine cream cheese, sour cream, buffalo wing sauce and dressing.
  4. Add chicken, 1 ½ - 2 cups of cheese and stir until blended.
  5. Taste your dip and see if it needs salt, pepper, garlic powder or onion powder. I usually don't put any in.
  6. Spread into your prepared pan. Sprinkle with more cheese if desired.
  7. Smoke at 250* for about 60-90 minutes.
  8. Check every 20 minutes or so and wait for the top to to turn golden brown.
  9. Everything is already cooked, you’re just looking to make sure everything is heated through and has a chance to absorb that smokey flavor.
  10. Serve with baguette slices, celery sticks or corn or tortilla chips
  11. Enjoy every bite!
