Description
Smoked Duck or Goose begins by salting the whole bird inside its cavity and seasoning the outer skin after brushing it with thick maple syrup. Smoking takes place at a controlled temperature between 200 and 225 degrees Fahrenheit over apple wood for about four hours. During smoking, the bird is basted hourly with maple syrup to build a glossy, flavorful coating. Once fully smoked, the bird is cooled completely before carving.
The smoky method imparts deep flavors while preserving moisture. The finished smoked poultry can be enjoyed cold or at room temperature sliced thin as an appetizer or sandwich meat. Alternatively, the breast can be cut whole and pan-seared for a warm entrée served alongside lentils.

- 1 duck or small wild goose, large

- 1/4 cup maple syrup thick
Instructions
- Salt the duck well inside the cavity, then paint the outside of the bird with the maple syrup. Salt the outside well.
- Set the bird in your smoker with a drip pan underneath. Smoke between 200 and 225 degrees over apple wood for 4 hours. Baste the ducks with the maple syrup every hour. When smoked, allow to cool completely, then carve. Serve cool or at room temperature as a cold cut or appetizer, or carve the breast whole and sear in a pan. Slice and serve with lentils.
