Smoked Oysters with Spicy Miso Butter

Smoked Oysters with Spicy Miso Butter offer a smoky seafood appetizer where fresh oysters are grilled over charcoal, topped with a butter blended with white miso, sriracha, and lime juice. The oysters are cooked twice on the grill to meld smoky, spicy, and tangy flavors, then served garnished with scallions and lime wedges.

Description

This recipe begins by preparing a charcoal fire for grilling at 450°F, suitable to impart smoky flavor. Fresh oysters are shucked open, discarding the top shell and loosening the meat. Meanwhile, a flavorful miso butter is mixed from softened unsalted butter, white miso, sriracha for heat, and fresh lime juice for acidity.

Oysters are placed flat on the grill grates and grilled for about 3 minutes until partially cooked. They are removed briefly to spoon a small amount of the spicy miso butter on each oyster, then returned to the grill for an additional 3 minutes to melt the butter and combine flavors. The dish is garnished with thinly sliced scallions and lime wedges, which add freshness and citrus brightness to balance the smoky, spicy richness.

Enjoying these oysters warm straight from the grill highlights the contrast between the tender smoked seafood and the creamy, piquant miso butter topping, making them an engaging appetizer or snack.

Servings
  • 24 oysters
  • 6 tbsp butter room temperature, unsalted
  • 2 tbsp white miso
  • 1-2 tbsp sriracha
  • 1 tbsp lime juice fresh
  • 1/2 cup scallions thinly sliced
  • 1 tsp black pepper to taste, ground

  2. Using an oyster knife, pull oyster shells apart. Discard the top shell and loosen the oyster meat using the tip of the oyster knife.
  3. In a small bowl, use a spoon to stir the softened butter, miso, sriracha, and lime juice together.
  4. Place the oysters directly onto the grill grates, facing upward. Grill them for about 3 minutes. Remove the oysters from the grill and top them with 1/2 teaspoon of the miso butter mixture.
  5. Place the oysters back on the grill grates for an additional 3 minutes. Serve them right away with scallions and lime wedges. Enjoy!
