Smoked Salmon Farro Bowls

This smoked salmon farro salad is made with peppery arugula, refreshing cucumbers, pickled onions and crisp fresh radish slices. Drizzled in a red wine vinaigrette, it's full of flavor and will leave you satisfied!

Ingredients
- 2 cups farro cooked
- 4 to 6 cups arugula greens
- 4 to 6 ounces smoked salmon torn into pieces
- 1 cucumber peeled and sliced, English variety
- ⅓ cup feta cheese crumbled
- onion for topping, quick pickled
- lemon for spritzing, slices
- salt kosher salt
- black pepper kosher salt
red wine vinaigrette
- ¼ cup red wine vinegar
- 2 garlic minced, cloves
- 1 tablespoon honey
- salt kosher salt
- black pepper kosher salt
- 1 pinch red pepper flakes crushed
- ½ cup extra virgin olive oil
Instructions
- Place the arugula and cooked farro in a bowl. Season it with salt and pepper all over. I also like to give it a little drizzle of dressing here.
- Top with the smoked salmon, feta, cucumber, pickled onions and spritz of lemon.
- Drizzle with the vinaigrette and toss. Serve!
red wine vinaigrette
- Whisk together the vinegar, garlic, honey, a big pinch of salt and pepper and the red pepper flakes. Steam in the olive oil while whisking. You can make this ahead of time and stick it in the fridge!
