Description

To make the smoked salmon pinwheels and prosciutto crostini, baguette slices are brushed with olive oil and toasted under a broiler until lightly browned. The toasted bread is then spread with Boursin Garlic and Fine Herbs cheese, providing a creamy, flavorful base.

Smoked salmon slices are spread with a thin layer of Boursin, then rolled to form pinwheels. Additional Boursin-topped crostini are layered with slices of prosciutto. Halved cherry tomatoes and slices of red and green peppers along with sliced olives add freshness and color to the presentation.

  • 1 baguette
  • 4 tablespoon olive oil approx
  • 4 oz smoked salmon 115g (1 small packet)
  • 5.2 oz Boursin cheese 1 block, garlic & fine herbs
  • 4 oz prosciutto 115g (1 packet)
  • ½ cup cherry tomato or other small variety
  • 1 red pepper
  • 1 green pepper
  • ¼ cup olives approx (I used green as keeps with festive colors but can use any, sliced

Instructions

  1. Cut some slices from the baguette and drizzle them with a little olive oil on one side, rub it in. Heat the broiler/grill and toast on the side with the oil until gently browned. Remove and set aside to cool.
  2. Take a few slice of smoked salmon and spread on a thin layer of Boursin Garlic and Fine Herbs Cheese. Cut thin slices and roll them up to form pinwheels.
  3. Spread some more Boursin on the toasted slices of bread and top each with a piece of prosciutto.
  4. Halve some tomatoes and cut slices from the red and green peppers.
  5. Arrange the smoked salmon pinwheels, crostini, pepper slices, tomato and olives to form a star, as I have in the photos, or any other arrangement as you prefer.

Notes

  • Adjust ingredient quantities to suit the number of guests and desired plate arrangement.
  • Use green olives for a festive color effect, but any sliced olives may be substituted.
