Smoked Turkey Sausage Breakfast Skillet

This Smoked Turkey Sausage Breakfast Skillet blends cooked smoked turkey sausage, sautéed mushrooms and scallions, then baked with a mixture of eggs, cheddar cheese, and chopped spinach. The dish becomes a savory baked egg casserole with a mix of textures: tender, set eggs, melted cheese, and savory sausage pieces. It makes a filling breakfast or brunch option with adaptable ingredients.

Description

The skillet begins by whisking eggs with water, then stirring in shredded cheddar and chopped spinach along with salt and black pepper. Separately, smoked turkey sausage slices are browned in a skillet, then combined with diced white mushrooms and scallions until softened.

The egg mixture is poured over the cooked sausage and vegetables in an oven-safe skillet and baked at 400°F until the eggs are set. The result is a firm yet tender baked egg dish with the savory flavors of smoked sausage and earthy vegetables balanced by the richness of cheese.

This versatile recipe can be adapted by changing the sausage type or removing meat entirely for a vegetarian version. Different vegetables or cheeses can be swapped based on preference. It is served warm, sliced directly from the skillet.

Variations include substitutions like chicken sausage, ground turkey, or swapping vegetables and cheeses. Additional spices or dried herbs can be added for flavor adjustments.

Ingredients

Servings
  • 10 large egg
  • 1 cup cheddar cheese shredded
  • 1 cup baby spinach chopped
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 10 oz smoked turkey sausage (sliced in half moons (like turkey kielbasa))
  • 4 ounces white mushroom diced
  • 1/4 cup scallions sliced

Instructions

  1. Preheat the oven to 400°F. In a medium-sized bowl, whisk together the eggs and 1 tablespoon water, then stir in the cheese and spinach, salt and pepper. Set aside.
  2. Heat a 12-inch cast-iron skillet or other ovenproof skillet over medium heat.
  3. Spray with oil then add the sausage slices, cook until browned on both sides, 5 to 6 minutes. Add the mushrooms and scallions and continue cooking, stirring until the mushrooms are tender, about 5 minutes. Remove from heat.
  4. Pour the egg mixture evenly over the sausage and vegetables in the skillet. Bake for 8 to 12 minutes depending on the width of the skillet, or until the eggs are set.
  5. Run a knife around the edge of the skillet before slicing. Slice into 6 slices and serve immediately.

Notes

  • Smoked turkey sausage can be substituted with chicken sausage or Italian turkey sausage for different flavors.
  • To make it vegetarian, omit the sausage entirely and increase vegetables as desired.
  • White mushrooms can be replaced with baby bella mushrooms, or another preferred vegetable such as bell peppers or zucchini.
  • Scallions may be swapped for chopped onions if preferred.
  • Cheddar cheese can be exchanged for shredded mozzarella or Swiss cheese for a milder taste.
  • Enhance flavor by adding spices like paprika, onion powder, or garlic powder, or herbs like oregano or parsley.
