Smoky Deviled Eggs

  • One dozen Eggs
  • about 1/3 c. Hellmann’s Mayonnaise (I use Canola Oil. It has less fat)
  • about 1 Tbsp. Dry mustard
  • fresh ground black pepper to taste , to taste
  • Good Quality Smoked Paprika for garnish

Instructions

  1. Place whole eggs in a saucepan and barely cover them with Cold water.
  2. Cover and place them on your burner set to high heat.
  3. After the eggs have boiled, turn off the heat and let the eggs stand, covered for 10 minutes.
  4. Run cold water on the eggs without draining the hot water until the water in the pan is very cold.
  5. Let the eggs sit in the cold water for about 20 minutes. It is best to peel them right after they cool. They can be stored in a covered container in the refrigerator for up to 2 days, if you’re not using them right away.
  6. Cut the eggs in half then gently ‘bend’ the the egg half with both thumbs on the round part of the egg. The yolks will generally fall right out. Place the yolks in a bowl.
  7. When all the yolks have been removed, mash the yolks with a fork. I like to leave a few chunks but if you prefer the filling very smooth, just keep mashing.
  8. Add the mayonnaise, dry mustard and pepper and mix thoroughly but gently.
  9. Cut a small corner out of a plastic food storage bag to use for filling (alternately you can use a small spoon to fill them).
  10. Fill the bag with all the yolk mixture and pipe into the holes of the egg white.
  11. When all the eggs have been filled sprinkle with smoked paprika.
  12. Cover loosely with plastic wrap and refrigerate until use

Notes

  • Don’t mix and fill the eggs until 2-3 hours before serving. They will turn crusty on the top if prepared too early!
  • Best if eaten fresh.
  • Leftovers can be refrigerated for 2 days.
  • Do not freeze.
