Smoky Tomato Soup
Description
Smoky Tomato Soup uses fire roasted tomatoes combined with jarred roasted red peppers and diced tomatoes to build a smoky and robust tomato flavor. The base begins with sautéed onion and carrot softened in olive oil, which adds sweetness and body. Garlic enhances the aromatics, while smoked paprika and cayenne pepper contribute a smoky and gently spicy layer.
After simmering to meld the ingredients, the soup is blended until smooth with an immersion blender, yielding a velvety texture that highlights the smoky tomato essence. The bay leaf is removed after cooking to avoid bitterness.
This soup is served warm and presents as a comforting and flavorful tomato soup alternative, with a subtle depth that distinguishes it from classic tomato soups. It pairs well with crusty bread or a sandwich for a balanced meal.
If an immersion blender is not available, transferring cooled soup to a regular blender is recommended, taking care to blend safely after cooling to avoid splatters.
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion chopped, medium
- 3 cloves garlic minced
- 1 carrot peeled and chopped
- 28 ounces fire roasted tomatoes with juices
- 28 ounces diced tomatoes regular; with juices
- 12 oz roasted red peppers jarred; drained and roughly chopped
- 1 cup vegetable broth
- 1 bay leaf
- 1 1/2 teaspoons smoked paprika
- ¼ teaspoon cayenne pepper
- 1 teaspoon kosher salt
Instructions
- In a large pot, heat the olive oil over high heat. Add the onion and carrot and sauté until soft and tender, about 5 minutes. Turn the heat to medium heat and stir in the garlic. Add the fire roasted tomatoes, tomatoes, roasted red peppers, vegetable broth, bay leaf, smoked paprika, cayenne pepper, and salt. Stir and let simmer over low for 15 minutes.
- Remove the bay leaf and use an immersion blender to blend the soup until smooth or until desired consistency is reached.
- Ladle the soup into bowls and serve warm.
Notes
- If you don’t have an immersion blender, cool the soup to room temperature before blending in batches using a regular blender to avoid splatters.
