Smothered Pork Chops

Smothered Pork Chops are pan-seared boneless pork chops topped with a creamy sauce made from sautéed mushrooms, garlic, cream cheese, heavy cream, and chicken broth. The sauce gently cooks with the pork chops, resulting in tender meat coated in a rich, flavorful gravy with herb accents.

Description

This recipe starts with boneless pork chops seasoned simply with salt and pepper, seared to develop a browned, flavorful crust. After removing the chops, mushrooms and garlic are sautéed in the same pan to soak up the browned bits. A mixture of chicken broth, cream cheese, heavy cream, and dried thyme forms a creamy sauce once the broth reduces slightly. The pork chops return to the pan to finish cooking through in the rich sauce.

The final dish features moist pork chops enveloped in a thick, creamy mushroom sauce with herbal notes from thyme and parsley. Garlic adds aroma while cream cheese lends body and silkiness to the gravy. This combination suits a comforting, hearty meal served with sides like mashed potatoes or vegetables.

Substitutions noted include mascarpone instead of cream cheese for a lower-carb option, and alternatives for fresh parsley such as thyme or rosemary, noting rosemary’s stronger flavor. Chicken or beef stock can be used as preferred. Careful sauce reduction thickens the gravy to a desirable consistency.

Ingredients

Servings
  • 6 pork chops 4 ounces each, boneless
  • 12 ounces baby bella mushroom sliced
  • 3 cloves garlic minced
  • cup chicken broth
  • cup heavy cream
  • 4 ounces cream cheese softened
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon parsley fresh
  • ½ teaspoon thyme dried
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Heat a large skillet to medium high and add in the olive oil.
  2. Season the pork chops with salt and pepper, then sauté them for a few minutes on each side. Be sure to get a good sear on them.
  3. Remove the pork chops and set aside. Add in the butter and mushrooms, then sauté them for a few minutes or until they just start to caramelize.
  4. Add in the garlic and sauté for about 20 seconds. Then add in the dried thyme and pour in the chicken broth to deglaze the pan, scraping up all the brown bits of flavor. Once the broth has reduced by ⅓, stir in the cream cheese and heavy cream.
  5. Add the pork chops back in and continue cooking just until they are heating through and the sauce is thickened to your liking.

Notes

  • If cream cheese is unavailable, mascarpone can substitute to reduce carbs.
  • Fresh parsley can be replaced with thyme, lemon thyme, or rosemary; reduce rosemary quantity as it is more potent.
  • Chicken broth may be substituted with beef broth depending on preference.
