This recipe begins with seasoning bone-in pork loin chops and searing them in vegetable oil on medium-high heat to develop a browned crust, locking in juices. After removing the pork, sliced yellow onions cook in butter until deeply caramelized over 15 to 20 minutes, providing a sweet, savory base. Minced garlic and fresh thyme are added for aromatic depth. Flour is stirred in to create a roux, then chicken broth and heavy cream are whisked in, thickening into a smooth, creamy sauce. Returned pork chops simmer gently in the sauce until tender and cooked through, allowing flavors to meld and the sauce to reduce by half. Ingredients
- 4 pork loin chops 1" inch thick, bone-in
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper coarse ground
- 4 tablespoons vegetable oil
- 1 yellow onion , sliced
- 2 cloves garlic , minced
- 2 thyme sprigs, fresh
- 4 tablespoons butter
- 2 tablespoons flour
- 2 cups chicken broth
- 1/2 cup heavy cream
Instructions
- Season the pork with the salt and pepper and add the vegetable oil to a cast iron skillet on medium high heat, searing on both sides until browned, about 4-5 minutes on each side.
- Remove the pork from the pan and add in the butter and onions, cooking well until caramelized, about 15-20 minutes, stirring occasionally.
- Add in the garlic and thyme stirring for 1 minute until fragrant then add in the flour and stir until it is fully absorbed before adding in the chicken broth and heavy cream and whisk well.
- Add the pork back into the pan, reduce the heat to medium-low and simmer for 10-15 minutes until the pork chops are tender and cooked through and the sauce has thickened and reduced by half.
