Snowy Chili Cheese Dip
Description
Snowy Chili Cheese Dip combines cottage cheese with diced green chiles, chopped tomato, salsa, and avocado to create a colorful, chunky dip. Optional ingredients such as cilantro, jalapeño, and green onions can be added to customize the flavor and add pungent, herbal, and spicy nuances. The dip is mixed in a bowl then served cold alongside Fritos scoops, which provide a crunchy contrast to its creamy and slightly spicy texture. The ingredients create a fresh and mildly spiced combination that is suitable for casual gatherings or simple snacks.
The preparation involves simply mixing the ingredients and optionally garnishing with herbs and fresh lime juice, which brightens the dip. The use of canned green chiles contributes a mild heat and a distinct tang without overwhelming the dish. Chopped avocado adds buttery texture and richness that complements the cottage cheese's smoothness.
This dip is convenient to prepare and can be refrigerated afterward, making it an easy make-ahead option. It pairs well with scooped corn chips which hold up to the chunky texture and help portion out flavorful bites.
Depending on appetite and serving size, consider having more than one bag of Fritos available, as small bags may not suffice for multiple guests or heavier dipping.
Ingredients
- 1 pound cottage cheese any fat content you like, container of
- 1 oz can diced green chiles or 7 ounce can, slightly drained
- 1 large tomato chopped
- 1/4 to 1/2 cup salsa
- 1-2 avocado chopped
- 1 teaspoon salt or more to taste
- 1/2 teaspoon chili powder
- 1 dash cayenne pepper
Optional:
- 1/4 to 1/2 cup cilantro chopped
- jalapeño sliced or chopped

Instructions
- In a medium mixing bowl, combine cottage cheese, green chilies, chopped tomato, salsa, avocado, salt, chili powder, and a dash of cayenne pepper. (You can drain the green chilies all the way if you want. I usually just open the can and use the lid to strain out the liquid right at the top.)
- Stir in the cilantro, jalapenos, green onions, and a few squeezes of fresh lime juice. These are all optional ingredients.
- Serve in a bowl with Frito scoops for dipping!
- Refrigerate leftovers.
Notes
- Use a can opener to drain excess liquid from green chiles for a less watery dip.
- Adjust salt and chili powder amounts according to your taste preferences.
- Keep the dip refrigerated and serve chilled for best texture and flavor.
- Having an extra bag of Fritos on hand is recommended for larger gatherings or generous dipping.
