Sofrito Recipe

This Sofrito Recipe creates a vibrant, herbaceous sauce made by blending green bell peppers, cubanelle peppers, aji dulce peppers, onion, garlic, cilantro, culantro leaves, tomatoes, salt, and olive oil. The mixture can be processed to the preferred consistency, from chunky to smooth, and serves as a foundation to add flavor and depth to many dishes. It stores well in the refrigerator or freezer for later use.

Description

Sofrito is a bright and aromatic base sauce combining several types of peppers, onions, garlic, herbs like cilantro and culantro, and tomatoes. The ingredients are processed together in a food processor until the desired texture is achieved. Salt and olive oil add seasoning and body, making it a versatile condiment. Using fresh components gives the sauce a fragrant and layered flavor profile that enhances the dishes it's added to.

The sauce lends itself to many cooking applications, providing a punch of flavor in stews, beans, rice dishes, or meats. The mixture can be stored in the refrigerator for up to two weeks or frozen for longer shelf life, making it convenient to use in small batches as needed.

Properly stored in the fridge, sofrito lasts up to 2 weeks; freeze in small batches to extend shelf life to 3 months.Adjust the texture by processing for shorter or longer times to suit your cooking needs.
