SOS Creamed Beef Recipe
Description
The recipe starts with browning ground beef and diced onions with salt and pepper, then draining excess fat. Using the same skillet, butter is melted and combined with flour to create a roux, which is cooked briefly before milk is gradually whisked in to make a thick white sauce. The cooked beef and onions are returned to the gravy, which is seasoned to taste. This method ensures the gravy carries the beef flavor while remaining creamy and smooth.
The creamy beef mixture is served hot over toasted bread slices, which soak up the sauce and provide a textured base. Adding additional seasonings like crushed red pepper, garlic powder, or herbs can customize the flavor, but the basic seasoning relies on kosher salt and black pepper to avoid blandness. The thick gravy should coat the beef and bread well.
If the gravy becomes too thick during cooking, additional milk can be added to thin it out to the desired consistency. Adequate seasoning after cooking is important for balanced flavor.
Ingredients
- 1 pound ground beef
- 1 small yellow onion diced
- 1 teaspoon kosher salt to taste
- 1 teaspoon black pepper to taste, ground
- 5 tablespoons butter unsalted
- 6 tablespoons flour
- 2 cups milk whole
- bread toasted
Instructions
- Set a large 12-inch skillet over medium-high heat.
- Add ground beef and onion to the skillet and season lightly with kosher salt and black pepper.
- Break up the meat as it cooks and cook until it's brown in color and no pink remains. Drain the meat and set aside.
- In the same pan as you used to brown the meat, set it over medium heat and add the butter.
- Melt the butter and sprinkle in the flour and whisk together until it forms a paste.
- Let it bubble slightly and cook for about a minute.
- Slowly stream in milk and whisk until thick. This might take a few minutes to get the gravy as thick as you like.
- Add cooked beef and onion to the white gravy mixture.
- Season with salt and pepper to taste. Feel free to add more flavor by sprinkling in crushed red pepper, garlic powder or fresh herbs.
- Serve over toast.
Notes
- If the gravy thickens excessively, thin it with additional milk to reach preferred consistency.
- Generous use of kosher salt and black pepper after cooking is essential to prevent bland flavor.
