Sour cherry sauce
Description
This sauce starts by whisking together sour cherry juice or water, sugar, and cornstarch in a saucepan. Cooking over moderate heat brings it to a gentle boil, thickening the mixture in about a minute. Fresh, canned, or jarred pitted cherries are stirred in off the heat to preserve their texture and freshness within the sauce.
The result is a vibrant bright sauce with a velvety shine, highlighting the tartness of sour cherries balanced by sweetness and thickened to a spoonable consistency. The concoction can act as a fruit sauce for ice cream, pancakes, or baked goods, adding a lively cherry note.
Ingredients
- 1 cup sour cherry 300 g, pitted, fresh, canned or jarred
- ¼ cup sour cherry juice or water
- 2 TBs sugar 3 TBs if using water
- 1 teaspoon cornstarch
