Sourdough Pizza Crust (So Easy)

This sourdough pizza crust recipe produces a wet, bubbly dough after an overnight rest, using sourdough starter, water, olive oil, bread flour, and salt. The dough is developed through a series of folds spaced at 30-minute intervals before fermenting overnight, resulting in a pliable dough that can be shaped into several pizza crusts.

Description

The preparation begins by mixing lukewarm water, active sourdough starter, and olive oil, then incorporating bread flour and salt until a cohesive dough forms. The dough rests for 30 minutes, followed by three sets of folding the edges into the center every 30 minutes to build gluten structure.

After these folding sessions, the dough ferments at room temperature overnight, developing air bubbles and flavor. The next day, the dough is divided into equal parts, shaped into round balls, and refrigerated for at least 24 hours before use. Allowing the dough to come to room temperature for about an hour before shaping ensures better handling.

Ingredients

Servings
  • 1/2 cup sourdough starter or discard, active
  • 1 cup water lukewarm
  • 3 tbsp olive oil
  • 2 1/3 cups bread flour
  • 1/2 tbsp salt

Instructions

  1. In a large bowl, combine the water, sourdough starter, and oil.
  2. Add in the flour and salt, stirring until fully combined. Cover the dough and let it rest for 30 minutes at room temperature.
  3. After 30 minutes, stretch the dough by folding the edges into the center. Cover the bowl and repeat the process two more times in 30 minute intervals for a total of three folds.
  4. Let the dough rest overnight at room temperature covered with plastic wrap. The next day, the dough will be wet and bubbly.
  5. Flour your working surface and divide the dough into 3-6 equal parts. Shape each one into a tight round ball.
  6. Place the dough rounds in the fridge for at least 24 hours in a sealed container. Before using the dough, let it rest at room temperature for an hour.
