After sous vide cooking, the chops are removed from the bag, patted dry, then quickly seared in a hot skillet with olive oil for 1 to 2 minutes per side. This step creates a golden brown, crispy crust while preserving the tender interior achieved by the sous vide process.

Serving immediately after searing retains optimal texture and warmth. Optional fresh thyme can be used as garnish. This technique yields juicy pork chops cooked precisely without overcooking.

Instructions

  1. Set your sous vide machine to 140°F (60°C) and allow the water bath to reach the desired temperature.
  2. Season the pork chops generously with salt and pepper. Place them in a vacuum-seal bag, adding olive oil, thyme, and garlic if using.
  3. Seal the bag using a vacuum sealer or the water displacement method. Submerge the bag in the water bath and cook for 2 hours.
  4. Once cooked, remove the pork chops from the bag and pat dry. Heat a skillet over high heat and add a tablespoon of olive oil. Sear the pork chops for 1-2 minutes on each side until golden and crispy.
  5. Serve the pork chops immediately, garnished with additional thyme if desired.
