Southern Brown Rice
Report
Called brown rice only because of the color of the finished dish, Southern Brown Rice is an easy side that goes well with many entrees.

Ingredients
- ½ cup butter (one stick)
- 1 cup long grain white rice
- 10.5 ounces canned beef consomme (recommend: Campbell’s brand)
- 10.5 ounces canned French onion soup
- ¼ teaspoon garlic powder
- 8 ounces canned sliced mushrooms lightly drained
- 1 tablespoon fresh chopped chives or substitute 1 teaspoon dried chives
Instructions
- Preheat the oven to 350 degrees. Grease a 9x9 baking dish and set it aside.
- Melt the butter in a medium skillet over medium heat.
- Add the rice and cook, stirring frequently, until the rice is lightly browned.
- Add the browned rice, and remaining ingredients to the prepared baking dish. Stir to combine.
- Cover the dish with foil and bake for 45 minutes or until the rice is tender. Remove the foil during the last 10 minutes of cooking time.
Notes
- If the rice is not tender at the end of the baking time, return it to the oven and continue baking in 5-minute increments until fully cooked.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply microwave on high for 1-2 minutes or until heated through or in a 350-degree oven for 10-15 minutes.
- To freeze, cool completely, then transfer to a freezer-safe container. Store in the freezer for up to 3 months. Thaw in the refrigerator overnight and reheat before serving.
