Southern Brown Rice

Called brown rice only because of the color of the finished dish, Southern Brown Rice is an easy side that goes well with many entrees.

Ingredients

  • ½ cup butter (one stick)
  • 1 cup long grain white rice
  • 10.5 ounces beef consomme recommend: Campbell’s brand, canned
  • 10.5 ounces French Onion Soup canned
  • ¼ teaspoon garlic powder
  • 8 ounces mushroom lightly drained, canned, sliced
  • 1 tablespoon chives or substitute 1 teaspoon dried chives, fresh, chopped

Instructions

  1. Preheat the oven to 350 degrees. Grease a 9x9 baking dish and set it aside.
  2. Melt the butter in a medium skillet over medium heat.
  3. Add the rice and cook, stirring frequently, until the rice is lightly browned.
  4. Add the browned rice, and remaining ingredients to the prepared baking dish. Stir to combine.
  5. Cover the dish with foil and bake for 45 minutes or until the rice is tender. Remove the foil during the last 10 minutes of cooking time.

Notes

  • If the rice is not tender at the end of the baking time, return it to the oven and continue baking in 5-minute increments until fully cooked.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply microwave on high for 1-2 minutes or until heated through or in a 350-degree oven for 10-15 minutes.
  • To freeze, cool completely, then transfer to a freezer-safe container. Store in the freezer for up to 3 months. Thaw in the refrigerator overnight and reheat before serving.
