Fresh green beans are briefly boiled (blanched) to partially cook and preserve their bright color and crispness, then cooled rapidly in ice water to stop cooking. Bacon is fried until crisp, providing crispy, salty pieces throughout the dish. Butter is melted with the bacon fat, and finely chopped onions cook slowly until translucent and caramelized, mellowing their flavor. Minced garlic is added for an aromatic boost.

The green beans are then added back to the skillet and cooked with salt and pepper for 5-6 minutes until tender but still slightly crisp. The bacon returns to the pan to combine flavors before serving. Seasoning is adjusted to taste, emphasizing balanced saltiness without overpowering the vegetable's freshness.

  • 1 pound Green bean washed and trimmed, fresh
  • 1/3 pound Bacon , diced
  • 2 tablespoons butter
  • 1 yellow onion finely chopped, small
  • 1 garlic minced, large clove
  • salt
  • black pepper

Instructions

  1. Bring a pot of water to a boil and blanch the green beans for 5 minutes. Immediately drain and dump them into a large bowl of ice water to cool for a couple of minutes. Drain and pat dry.
  2. In a large skillet over medium-high heat, fry the bacon until crispy. Transfer to a plate. Melt the butter in the skillet with the remaining bacon grease and cook the onions until beginning to caramelize, about 7-8 minutes. Add the garlic and cook for another minute. Add the beans along with about 1 teaspoon salt, and a little pepper, and cook for 5-6 minutes. You want them crisp but not crunchy hard. Return the bacon to the skillet and stir to combine. Add salt and pepper to taste. Serve immediately.
